As the largest city in Nevada, Las Vegas offers a host of dining options from once in a lifetime experiences to mom and pop diners. In a 24-hour city where staying up late is the rule rather than the exception, a late brunch is nearly a requirement. Luckily, Las Vegas has many delicious choices. Babystacks Cafe

A small local chain, Babystacks Cafe is a laid-back eatery serving breakfast and lunch at three Las Vegas locations plus one in Henderson. Featuring American cuisine imbued with Filipino and Hawaiian flavours, this restaurant offers diners a host of tempting sweet and savoury selections, including over 15 different flavours of pancakes. Dishes to note are carrot cake pancakes topped with cream cheese syrup and pecans and Rick’s adobo fried rice with shredded chicken and rice wrapped in an omelette — a house specialty and local favourite. Tucked inside The Venetian, DB Brasserie is the latest venture by chef Daniel Boulud. Featuring delicious French-American cuisine within a sophisticated yet casual interior, this eatery serves lunch and dinner daily plus a weekend brunch. The brunch menu offers guests several brunch cocktails, including mimosas and several bloody Marys, alongside a delectable array of sweet and savory plates. Procuring the best seasonal ingredients, diners can feast on a Belgian waffle topped with bourbon Chantilly, spiced pecans, and maple syrup; Thai mussels in a coconut milk-white wine-cilantro-chili sauce accompanied by pommes frites; and duck hash topped with a fried egg and served with watercress salad. Established in 2012 by chef Natalie Young, Eat. is a downtown breakfast and lunch eatery specializing in American comfort cuisine with a twist. Within a lively environment, diners can feast upon flavorful options like the chicken fried steak smothered with country pork gravy accompanied by two eggs, chive potatoes, and toast and the tofu scramble with wild mushrooms, green onions, sprouts, chive potatoes, plus toast. Be sure to order some cinnamon biscuits with warm strawberry compote for a mouth-watering sweet treat.

Founded by chefs Sam Marvin and Frank Fronda, who wanted to offer clients quality meats, Echo & Rig is a butcher and modern American steakhouse. Nestled in the shopping and dining destination Tivoli Village — located 15 minutes from the Las Vegas Strip — this light-filled spacious restaurant is open for lunch and dinner daily and offers a weekend brunch that will appeal to both carnivorous eaters and vegetarians. Delectable highlights to note are the short rib hash made with prime short rib, potatoes, shallots, herbs, poached eggs, and smoked paprika hollandaise sauce and the blueberry buttermilk pancakes served with whipped butter and house-made blueberry syrup. Established by Ben Sabouri and Matt Moore, MTO Café is a downtown eatery featuring comfort food made with the freshest ingredients available. A hip and retro interior and delicious meals — by chef Johnny Church — await guests who have the option of visiting for breakfast or lunch seven days a week. Sweet and savory highlights include lemon poppy seed pancakes with a blueberry-ginger compote; chicken ‘in the waffle’; and the made-to-order chorizo breakfast with avocado, roasted tomatoes, and piquillo peppers served as a wrap, omelette, or skillet. With a menu full of innovative dishes, this restaurant is popular and will be opening a second location in Downtown Summerlin — a shopping and dining venue — later this year.

Park on Fremont

A downtown gastro-pub, Park on Fremont features creative American bar cuisine and brunch Friday, Saturday, and Sunday.
