These Popsicles Are Far Too Pretty to Eat
In an effort to make their popsicles healthier and more appetising, Najs Cream turned to edible flowers and fresh fruits, transforming their desserts into true works of art. You can find them in their store on Widłakowa 11a in Poznań. Culture Trip caught up with the Najs Cream team, Ewa and Julian, to ask where they get their inspiration from and which flowers make for the best treats.
Culture Trip (CT): Why did you decide to start an ice cream place?
Ewa (E): We were working in different restaurants for a few years and really wanted to do something on our own. In Julian’s family house, his mother ran a little hotel with a restaurant, which is where we found the space to start working on our ideas. There was already an ice cream machine, so we just started experimenting. We had a lot of fun inventing different flavours, adding unusual additives like hemp butter or glazed bacon. There are a lot of places offering soft-served cream in our town, so we wanted to stand out with something new. That’s how we got into popsicles.
CT: What inspired you to add edible flowers to your popsicles?
Ewa and Julian (E and J): We wanted to create something different, something more natural, something without gummy candies, cookies and stuff like that. Of course, those things are delicious, and we love sweets, but they’re not that healthy. We wanted to take advantage of nature, with its abundance of healthy and beautiful ingredients. We had fresh fruits and herbs. I also planted edible flowers in the garden for personal use and we thought why not try ice cream with flowers and it worked! We still don’t know how all of this happened.
CT: What flowers do you usually use?
E and J: We started with pansies, but soon my garden was not enough, so we had to partner with a company that offered many more species: cornflowers, roses, daisies, nasturtiums, borage, chrysanthemum, marigold, verbena and much more.
CT: How do you come up with flavour combinations and your designs?
E and J: We let our imagination run wild. We feel free and it’s amazing to be able to create what we want. We are both crazy about cooking and baking so it’s a lot of fun and it gives us a sense of accomplishment.
CT: What are some of your favourite ingredients?
E and J: We already have some flavours that are always there, like lime with mint and edible flowers, mango with strawberry, watermelon with kiwi. Our favourite ingredients are pomegranate seeds, mint leaves, blackberries, blueberries, figs, goji, slices of strawberry, kiwi, peach and, of course, beautiful edible flowers.
