Sitting on the edge of the Chihuahuan Desert in New Mexico, Las Cruces (“the crosses” in Spanish), just north of the Mexican border, is a low-rise, spread-out city with the astounding backdrop of the jagged Organ Mountains. This dramatic range rises from the plains and dominates the skyline.
