Headed by Executive Chef Pisith Theam, The Dining Room fuses French fine dining with classic Khmer cuisine, using the freshest and finest seasonal products. Think wok-fried prawns with curry paste, spring onion and roasted peanut, accompanied by jasmine rice, and sautéed chicken seasoned with ginger, palm sugar, spring onion and saw-leaf, and served alongside Kampot fish sauce and steamed rice. Overlooking Siem Reap River, FCC Angkor is housed in a stunning, minimalist-style building. Located in the heart of Siem Reap, Terrasse des Eléphants boasts a rooftop pool and sunbathing space, as well as a ground-floor restaurant specialising in recreating traditional Cambodian dishes. All of the rooms reflect the temples that sit close by, with suites featuring a rock-pool double shower, complete with intricate carvings. Fish amok and lok lak are popular dishes on the menu.
