Manager Joachim Amsellem shares how he keeps the whole restaurant completely kosher. Two days before Passover, the restaurant is cleaned thoroughly to remove all remnants of bread. After the cleaning, a representative from the Chief Rabbinate makes sure every fork, dish, ingredient and even wine bottle is strictly following the kosher laws. Nola is a charming American bakery located on Dizengoff Street. During Passover, this pâtisserie still sells leavened goods, offering treats for everyone whether you choose to keep kosher or not. Owner Talya Rasner explains that instead of using a flour substitute, chefs create flourless desserts. Some of their flour-free specialities include chocolate cake, baked chocolate mousse, and pistachio cake with raspberry whipped cream. Nola also has their regular selection of gluten-free desserts that are also kosher for Passover.
