We talk to Abby Lavin, the talented baker behind New York’s unique Jam Jar Bakery. After an education at the prestigious French Culinary School in New York and a successful career in renowned restaurants and bakeries, Abby fulfilled her dream and set up her own bakery. Inspired by the tradition of baking in mason jars, Abby home-makes her delicious pies in jam jars. From apple to fudge flavors, she creates both classic and seasonal recipes for a truly distinctive experience. We interview Abby to find out more behind her success and passion for pies.

What motivated the foundation of Jam Jar Bakery?

I have been baking since I can remember. I always knew I wanted to own my own bakery, so when I was 23 I moved to NYC from Cleveland, OH to go to Culinary School. After working in the industry for almost 5 years I knew it was time for me to strike out on my own, and so Jam Jar Bakery was started in 2013.

Can you tell us about the experience of starting your own bakery?

It’s exciting, liberating and terrifying all at the same time. It is the hardest work I have ever experienced, but it is extremely rewarding.

What advice do you have for people thinking of starting their own business?

It is just like having and raising a baby. No time is the right time, you will never really be ready to start the journey. The more you give to your business the faster and stronger it will grow.

How many different pies does Jam Jar sell? Which is the most popular?

We have seven to eight flavors available at a time. Two to three flavors change seasonally every three months. Our best seller is the Hot Fudge Toffee Crunch; it’s a fudgey brownie topped with gooey toffee and Heath bar pieces.

What inspired the idea of putting your pies in jars?

I have family in Texas, and it was just a cute gift idea to bake a pie in a mason jar. I just made the tradition new by baking my pies in Jam Jars and giving them a more gourmet look.

Sweet or savory?

Always sweet. Always.

Where in NYC do you advise our culture-loving readers to visit?

My favorite bakery, they have the best croissants but are known for their beautiful macarons. It is called La Maison du Macaron at 132 West 23rd Street. The lattes are amazing too.

What are you reading or watching at the moment?

I am a rerun addict and at the moment have been binging on Seinfeld.

What can we expect from Jam Jar in the future?

We are opening our first brick and mortar. It will be open in the next month or so. Up until now we have been working out of a shared kitchen space in Harlem. So having our own space is a dream come true.
