Located in the hip historic Highland district, Root Down is unique, as it operates from a converted 1950s service station. The sustainable diner has one of the most interesting experiences in Denver – they grow fresh herbs and harvest vegetables form their roof top patio gardens. Creative dishes include organic date and goat cheese stuffed peppadews. The soups, such as their organic carrot and their red curry or zucchini and poblano, are very popular here.

Govinda’s offers an exclusively vegan/vegetarian Indian buffet for those who want to get a hefty amount of food for their money. The buffet consists of a treasure trove of breads, organic vegetables and non-GMO tofu, rice and beans. Every week they feature different entree specials, and there are several revolving dinner entrees for their buffet that include spinach lasagna and BBQ tofu. Named in Food & Wine Magazine as one of the best vegan/vegetarian restaurants in the nation, and the healthy comfort food also donates 10 to 15 percent of its Monday night sales to different charities. Although WaterCourse is best known for their undeniably good breakfasts (which are served all day long), but they also serve lunch. Their seitan wings are raved about and their cheese made from cashews, but it’s all so good you wouldn’t even realize that everything served on their extensive menu is 100 percent vegan.
