Pastel-coloured sensation Yolkin, previously a pop-up in Covent Garden’s SIAM eatery, serves delicately flavoured macarons stuffed with a thick slice of ice cream.
The delights come in flavours such as lychee, Earl Grey and pandan and coconut.
The shop was founded in 2015 by Sammie Le. The baker started making the ice cream sandwiches as a way to reduce the food waste from making her favourite macarons at home, which use a lot of egg whites. She discovered that she could make the leftover egg yolks into ice cream, which was a natural fit for the centre of a macaron.
The name of the shop came from the fact that ice cream has ‘yolks in’ it.
The new permanent shop will open on Rupert Street in Chinatown, not far from where Le first traded at the Street Food Union market in 2015.
As well as the Instagram-famous macaron sandwiches, you’ll be able to enjoy soft-serve, scooped ice cream and milkshakes.
