TCT: What is the most unusual cocktail request you’ve had?
There was a strange request once for gin with milk at No.11. Similar to a classic Ramos Gin Fizz, egg white, double cream, milk, lemon juice, gin & soda. Slightly strange, but actually quite tasty.
TCT: What advice would you give to someone who was trying to break into the bar industry?
Really, it’s just the same as with any career: be enthusiastic to learn, keen to get stuck in, and get knowledge of the products you are working with.
TCT: What’s next in your career?
I would love to be able to compete in Global Cocktail competitions, travel around the world!
TCT: What advice would you give your younger self?
I started pretty young anyway – as soon as I was legal at 18, I had my first bar job –, but I guess just to pick myself up and get on with things whenever you get a knock back.

Doorly’s Rum, Lime & Sugar!
