Helen Underwood describes herself as a micro baker, making around two hundred loaves a day in her cosy Cambridgeshire kitchen and selling them to local shops and restaurants. We went to meet her to find out about how she starting baking, the best flour to use, and why sourdough is the tastiest of breads. Notably, she gets her flour from Jon Cook’s traditional mill.
