Egg waffle, also called ‘eggettes’, are an iconic snack for the locals of Hong Kong. Traditionally, baked-egg waffles are golden-yellow in colour, with a firm outer-shell and a soft, full interior. The egg waffle’s success as street food is partially due to the fact that it is best consumed minutes after coming out of the skillet – it can be made quickly on the spot and delivered into customers’ hands while still piping hot.
